I don't think the tiles will loosen if you don't grout them,
but water will probably get behind the tile, and that could
cause all sorts of problems.
If you like the look of tile
with a grout line that is recessed, maybe you can try scraping
out some grout from the grooves after you have applied it.
Brick layers use a little tool to create the flat-bottomed
recessed mortar lines, so it stands to reason that a similar
tool might be available for raking out the grout between
tiles. But I have no idea where to find such a tool.
Personally, I would be trying a screwdriver to rake out the
grout. You'd need some way to control the depth the tool digs
in, maybe wrapping some electrical tape around the shaft would
act as a depth control.
Keep in mind that the grout
needs to be pressed in place to form a tight bond against the
tile, so after you've scraped out some grout, you should
somehow apply a little pressure to the recessed grout. Maybe a
small piece of wood, foam or plastic could be cut into a
narrow "spatula", and this could be dragged over the
grout lines. Remember that I'm not a tile expert, just a guy
who has often found solutions to unusual problems.
